Pinterest Wednesday!

Yay!  I love Pinterest Wednesday (can you tell?!), and today’s topic is FOOD.  Healthy food though, friends, because I’m still trying to lose those baby pounds!!
I’m starting with this one, because I made it for lunch yesterday, and plan to make it again today!! It was very yummy. Not as yummy as a real Pina Colada of course, but enough to enjoy on a nice sunny day!

Big question for you: Is Nutella healthy, or not healthy? Did you hear they were just taken to court recently for advertising themselves as being healthy? I feed it to my kids every morning….

Sunshine Muffins

Mr. Sandman held me hostage the past 2 days.  Saturday and Sunday I could barely keep my eyes open.  I was just so, so, tired.  Anna also had a bad cold, and hubby was feeling the same way I was, Jordan’s allergies were acting up, so we had the quietest weekend ever.  Jordan didn’t mind, he got to play his computer games all day, both days, while the rest of us slept…  but the weather was more gorgeous than ever, it was the last weekend of Spring Break, plus we missed my brother’s birthday party.  We were totally bummed.

Today though, I seem to be pretty much back to normal (with the exception of a sore throat) and managed to get a lot done…. including…get this – baking.muffins.with.Anna.  I am not a fan of baking, so baking anything with a 3 year old is not my idea of fun.  Plus, we baked these babies from scratch.  When I asked Anna if she wanted to bake muffins with me, she immediately looked in the cupboard of packaged baking goods.  When I said “no not those kinds”, she replied with:

“We’re not baking pretend muffins?!  We’re baking REAL muffins??”

Wow, what have I done?!  I’m still a good mom, right?!  ;)

And our experiment went surprisingly well.  I even doubled the recipe, as these are my favorite muffins ever…  there’s a lot of grating involved, especially when the recipe is doubled, but we pulled it off, and they are d.e.l.i.c.i.o.u.s.  Healthy, chewy and moist all at the same time, I’m so happy to have a freezer full of them again.  I love pulling one out every morning for breakfast, heating it up, and loving it with a hot cup of tea.

Which, of course, I had to test immediately, just to make sure I did the job right.

The kids had juice served with my crystal creamer… this is usual with our tea parties…it’s the only time the crystal comes out!

Here’s the recipe for you!

Sunshine Muffins,

12 muffins or 4 mini loaves

Ingredients

2 cups (500ml) all-purpose flour
1 1/4 cups (310) ml) white sugar
2 tsp (10) ml baking soda
2 tsp (10ml) ground Cinnamon
1/2 tsp (2.5 ml) salt
3 eggs
1 cup (250 ml) applesauce
2 tsp (10 ml) Vanilla extract
2 cups (500 ml) grated carrot
1/2 cup (125 ml) raisins
1/2 cup (125 ml) sliced almonds
1/2 cup (125 ml) shredded cocnut
1 apple, peeled, cored and coarsely grated.

Instructions:
1. Preheat oven to 350 F (190 C). Lightly spray muffin pan or mini loaf pans with vegetable oil.
2. Whisk together first 5 ingredients in a large mizing bowl and set aside.
3. Whisk together eggs, applesauce, and Vanilla Extract in another bowl. Add carrots, raisins, almonds, coconut and apple to wet mizxture
4. Combine wet with dry ingredients and stir with a mixing spoon until just well blended.
5. Spoon into prepared pan(s) and bake for 20 minutes (may take 5 – 7 mintues longer if using mini-loaf pans.)

Per Serving: Calories 230, Fat 4.5g, Cholesterol 60mg, Sodium 350mg, Carbohydrate 45g (Fibre 3g, sugars 25g), Protein 5g

Oh, and a little family note, this little darling can now do “So BIG!” and turned 10 months yesterday!  Yikes!

8 Fears In A 10 Day Challenge

So, today is a continuation of my 10 Day (10 week for me) You Challenge…

And so today’s topic is my eight fears.

I originally thought this would be my most difficult post in this challenge, as I  don’t really allow myself to think about my fears too much, but then I was reminded that I do have a lot of irrational fears.  So here goes!

1.  I serious fear that I do have, is that I die with some huge regret in my life.  That I will do something so dumb, and so wrong, that I will die regretting the life I lived.  So far I have done some pretty dumb and some pretty wrong things, but I don’t need to regret them anymore… but I fear there will something…

2.  I fear that I have burned bridges with people I care about, and don’t even realize it.  I am a very nice person, but sometimes I can say some pretty dumb things, and I fear I may have hurt people.

3.  I fear being rear ended.  Some years ago, when my second child was just a baby, I was rear ended pretty bad, I saw the whole thing happen in my rearview mirror, but I couldn’t safely get out of the way.  Now I fear it all the time.  I am a horrible passenger for my hubby, as he’s used to city driving.  My fears in the car gets worse the more babies I have.  Time to stop having babies.  :)

4.  I fear my kids will get hurt.  All the time.  It sucks.  I fear for them when they play on their bikes, when they go on the trampoline, when they go down a slide or hang upside down on the monkey bars.  I think I have watched way too many America’s Funniest Home Videos.

5.  I fear being 3 inches off the ground.  I used to be the girl who loved flying down a ski hill, riding crazy on the back of a motorbike, I used to dream of the chance to go skydiving and bungee jumping (now that I have kids I’ve crossed those off my list) I love glass bottom elevators and rollercoasters, scuba diving and snorkeling are amazing to me… but put me on ice skates, roller skates, or stand me on a skateboard (or 3 inch high heels for that matter!) and I freeze.

6.  I fear Earwigs.  I don’t even know what an earwig looks like, but I once heard a story of a kid with an earwig stuck in his ear, and ever since then, when I see something that could resemble an earwig, I freak out.

7.  I fear bloody meat.  A rare steak, or bbq chicken that still has some pink in it… I can’t go on.  Makes me gag.

8.  I fear toxins.  I am always pretty sure there’s disgusting toxins in the air… I must be rubbing off, because my hubby just bought us some air purifiers!  It was really bad when I was pregnant.  If I was walking amongst traffic, I had to cover my mouth, so the toxins wouldn’t hurt my baby.

So now that you are finding me really odd, maybe a little neurotic, I hope you’ll continue to follow me and not judge me!  LOL!  Please share some of your fears with me so I don’t feel so strange!

Keeping Sane

I eat when stressed.  and today was a prime example.  By 10:00am I had purchased my survival kit: $10 worth of candy.

It’s been a bit of a depressing house here for the last 24 hours…  I took our adorable baby to the doctor yesterday and found out she has bronchitis :(   She needed antibiotics and a puffer with a face mask thingy for an infant to breathe it in.  Later in the day my husband and son went to the walk-in, to find they too have bronchitis, plus a touch of pneumonia.  :(   This morning I had to bring baby back in to the dr to make sure she had improvement (30% better yay!  dr said – “now you won’t have to spend the long weekend in the emergency”.  Love my doctor, but dr.s sure have a great way of laying on the guilt trip… I’m a mom, not a PhD!)  I dragged the other 2 kids along to this appointment, and had Anna checked out too (she just has a cold and a severe case of cranky).  By the time we left the office, I knew I would need my survival kit to get through the day.  $10 worth of candy, 3 movies, play-do, lego and painting in between, they were all in bed by 6:45 tonight.  Whew.  Hubby and I are already thinking we need an extra survival-recovery kit – may a little DQ?!  Oh dear, no wonder I’m not losing my baby weight!

Anyhoo, yesterday, while waiting 45 minutes (!) for my baby’s prescription to be filled, I was craving something yummy… but instead I forced myself into the new tea shop in the mall, called DAVIDsTEA.  I should say, I didn’t really have to force myself (that is, after walking past all the chocolate bars in Shopper’s Drug Mart).  Since I’ve been banned from caffenated coffee with my chronic headaches, my tea collecting has gotten out of control increased.  There are 2 new tea shops in our mall.  I visited the other one a coupe weeks ago, and had a good experience, but I have to say, I really enjoyed this shop.  It had more of a funky vibe to it, and she pulled out all sorts of cool flavors I had never heard of.  If you are into tea, you should check this place out.  I ended up purchasing a caffeine free tea called Chicory Dickory Dock, which gives the essence of coffee, with a vanilla twist.  Super yummy.  And then a very fun rooibos tea called Oh Canada, with maple flavor and sprinkled with maple leaf candies.  Not that you can see them in your tea-pot, but knowing they were there made me smile this morning.

Well, wouldn’t you know it, just to end this day off with a bang, not only will our computer not upload pictures (currently being wiped clean to try to solve the problem), but now this blog won’t allow me to upload the pictures on this blog that I took with my cell phone!  Grrr, technology.  Truly a love/hate relationship for me.  I wanted to show you a picture of the light fixture I have been working on for our Master Bedroom, but I think I’m going to call it a night, and head on over to Dairy Queen after all!
